His mother used to grow eggplant in her garden. This dislike could have history.
Yeah, I don’t think he’s ever liked eggplant. Or squash. I REALLY love squash.
I think you really have to be of Italian ancestry to cook an edible eggplant dish. Though my German grandmother used to make some great breaded eggplant. Unfortunately my mother created a disaster whenever she tried to cook it.
I’ve been looking at some eggplant recipes online. I think my next batch will be better.
Here’s a hint, from my Chinese cook friend to me to you: boil eggplant first before you fry it. Not for too long, just enough for it to get a bit soft. If you are using the long, thin eggplants, cut them into about 1- to 1.5-inch lengths before boiling. They fry up perfectly, take less time, are much more tender and without a trace of bitterness.

And if that doesn’t work, just tell him it’s not eggplant, it’s aubergine.

No squash, either? That’s the kind of thing that makes people say Kentucky’s not the South. 😉
I used to hate eggplant, but now I like it grilled and I like breaded eggplant if it’s sliced real thin, and Paul’s mom (100% Sicilian) makes an eggplant relish that is crazy good. If eggplant is sauted, or sliced too thick, I can’t get past the texture.
I think you need to come down here, get out in that kitchen, and rattle some pots and pans.
Or just hang out.
